The best way to beat the winter blues is to make a celebration! My son happens to have a birthday in February...so it's the perfect excuse to have a dinner party! We're eating healthy (new year new you), so I will be serving cream of asparagus soup, wild alaskan salmon, roasted tomatoes, and salad. It is a birthday, so of course there will be cake and homemade tartufo! Cue up a festive winter wonderland table setting and a fire...spring can wait.
The salad was delicious and is taken from Southern Lady Magazine. I used a spring mix with goat cheese and fresh raspberries. I also added pomegranate seeds because I love them. The raspberry vinaigrette made it!
Raspberry Vinaigrette
3 tbsp red wine vinegar
3 tbsp extra virgin olive oil
1/2 cup raspberries
1 tbsp minced shallot
1 tsp dijon mustard
1/2 tsp salt
pinch ground pepper
In a small bowl, whisk together all ingredients, breaking raspberries into small pieces as you stir. Refrigerate until ready to serve
makes 1/2 cup
